Vegetarian Spiced Pizza with Tomato Kasundi and Banana Yoghurt

Ingredients

2 Tbsp Canola oil

1 Tbsp Grated ginger

1 tsp Mince garlic

¼ cup White onion

¼ cup Pumpkin

¼ cup Carrot

¼ cup Kumara

Salt

Milled black pepper

1 Banana – chopped into 5cm cubes

2 Tbsp Greek yoghurt

¼ cup Coriander

1 Tbsp Red chilli, de seeded and finely chopped

½ Lime juice - squeezed

Salt and Milled pepper

25 – 30cm pizza base

4 Tbsp Food By Chefs Tomato Kasundi

1 cup Pizza cheese

¼ cup baby spinach

Torn coriander


Instructions

  1. Pre heat your oven to 220°C.
  2. Dice onion, pumpkin, carrot and kumara into 10cm cubes.
  3. Sauté in a large pan with oil, garlic and ginger until the vegetables become tender.
  4. Prepare in a small bowl the yoghurt, roughly chopped coriander, de- seeded and finely chopped chilli, lime juice and diced banana. Cover & leave to marinate for 30 minutes in the fridge before use.
  5. Prepare the pizza base with a good layer of Tomato Kasundi and cheese.
  6. When the vegetables are ready. Cover the pizza evenly and season with salt and pepper.
  7. Bake until gold and the base is cooked, approx 10 minutes.
  8. Garnish with banana yoghurt, torn coriander and spinach.
