Red Pepper hummus

Prep Kitchen Hummus Garlic & Lemon 200 gm 


Green Pea falafel

Portions – 4

Peas, chopped 170 gm

Olive Grove Gluten Free mix 170 gm 

Salt as needed


Raw zucchini and yellow capsicum salad

Portions - 4

Courgettes, spiralled 340gm

Prep Kitchen yellow capsicum 400 gm 

Salt as needed

Sumac 1 tsp


Dried Capsicum

Portions - 4

Cavalo nero 

Leeks, blanched

Instructions

Red pepper hummus

  1. Blend the red capsicum and hummus on high speed to get a pourable consistency sauce.

Green pea falafel

  1. Mix together and add salt to taste.
  2. Form into 20gm patties and shallow fry. 
Raw zucchini and yellow capsicum salad
  1. Spiralize the courgette and add touch of salt, let stand for ten minutes. Drain any excess moisture and add in the yellow capsicum, julienned. Toss together and check for seasoning.

Dried capsicum

  1. Dehydrate for five hours.
