Spiced Baked Eggs with Breakfast Sausages


8 Bean Supreme Roast Garlic Breakfast Sausages

1 Onion – diced 1cm

1 tsp Garlic - minced

1 tsp Ginger - minced

20g Canola oil

1 tsp Paprika

1 tsp Cumin powder

1 tsp Turmeric powder

1 tsp Coriander powder

0.5g Chilli powder

1 tsp Salt and milled black pepper

1 Tin whole peeled tomatoes

100ml Water

1 Tin red lentils  - drained

4 Eggs

3 tbsp Unsweetened plain yoghurt (optional)

15g Coriander – fresh torn


  1. In a deep frying pan fry sauté onion, garlic and ginger in canola oil till tender with colour.
  2. Remove the hot pan from the heat and stir through the spices.
  3. Place the pan back on the heat when the spices become aromatic add the drained lentils, water and tomatoes.
  4. Simmer away to develop the flavours. 5 minutes before the lentils are ready, crack the eggs on top of the lentil mix and cook in a 200’C pre heated oven.
  5. Use a chargrill to mark and cook the sausages.
  6. Serve at the table in the pan garnished with yoghurt and coriander.
