Tomato kasundi, Mozzarella Toastie with Rocket, Apple and Walnut Salad

Ingredients

2 Sour dough 1cm thick slices

80g Mozzarella 

Olive oil

1 cup Rocket

30g Apple

20g Celery

15g Walnuts – roasted pieces

1/2 tsp Lemon juice

Instructions

  1. Brush the outside of each sour dough slice with olive oil to provide a crispy fried exterior.
  2. Spread kasundi on both slices of bread and lay on thinly sliced mozzarella. Using a sandwich press toast the sandwich but try not to over press. 
  3. Whilst the sandwich is cooking make the salad by first cutting the apple and celery. 
  4. Complete the salad by tossing together rocket, apple, and celery, walnuts, aioli and lemon juice.
  5. Sandwich is cooked when the outside becomes fried and golden and the cheese has melted. Serve hot with the rocket side salad.
