Marc Soper's Tofu wrapped Yams & Tree Mushrooms - Part 1/3

Ingredients

12 Thin shavings of the Bean Supreme Organic Tofu

30g White onion, peeled, diced

6g Garlic, chopped

130g Yams, diced

50ml Vegetable stock

60g Wild mushrooms

1g Thyme picked, chopped 

1g Wild mint, chopped

4g Parsley, chopped  

30g Panko crumbs

40ml Olive oil, plus extra for cooking

Marlborough flaky salt, cracked pepper

Instructions

  1. Heat oil, add chopped onion and garlic, sauté. Add diced yams and cook, add vegetable stock and cook for a few minutes before adding sliced tree mushrooms and thyme, cook till yams softened. Season and add chopped mint and parsley and mix carefully. Season to taste.

  3. In a suitable bowl mix panko with olive oil, and mix well.
  4. Line 50mm rings with baking paper and then line inside of the rings with sliced tofu, fill with yam mix and top with panko crust and pack down. Bake in oven 180 degrees C for 10 minutes when required, remove carefully from mould and serve.
