Remove tofu from the pack and dry. With a peeler first peel 3 slices with a potato peeler from each of the long sides of tofu.
Cut the rest of the tofu in half to open out as 2 large sheets. With 2 cutters cut rounds out and then cut smaller rounds from the centre.
Place both into the beetroot juice or blended beetroot. Leave there for 20 minutes.
Remove and place into a salt and pepper mix. Drop carefully into a fat fryer foe 1-2 minutes at 160 degrees C. Remove and drain on towel for several minutes.
