Roasted Baby Gems with Pesto and Roast Garlic Aioli

Ingredients

300g Baby gem potatoes

15g Extra virgin olive oil

1/2 Garlic bulb

1/2 tsp Sea salt

2 tbsp Food By Chefs Fresh Basil Pesto

2 tbsp Prep Kitchen Roast Garlic Aioli

1/4 cup Peppery micro greens

1 tsp Chilli oil

Instructions

  1. Use a small cast iron pan or similar sized pan than can be used from the oven to the table.
  2. In the pan place baby gems, garlic, sea salt and oil. Roast in a pre-heated 220’C oven for 20 minutes.
  3. Once cooked spread around the pesto, aioli and micro greens. Finish by drizzling with a infused oil such as chilli, lemon or garlic.
