Shaved Fennel, Orange & Mint Salad with Pistachio, chilli seed Dukkah

Ingredients

1 Large Fennel bulb

2 Orange juice & segments

3 tbsp High quality olive oil

5g Mint leaves

1/2 Lemon - juice

2 tbsp pre-made Dukkah mix

Sea salt & milled black pepper

4 tbsp Food By Chefs Free Range Caesar dressing with Karengo

Instructions

  1. Wash, remove core and halve the fennel bulb length ways
  2. Using a mandolin or knife slice the fennel into pieces as thin as possible.
  3. Toss fennel through a bowl with olive oil, lemon juice, orange juice & sea salt. Leave for 30 minutes to macerate.
  4. Add orange segments and torn mint to the fennel bowl and gently toss through.
  5. Arrange salad in a serving bowl using some of the juice as a dressing, finish with Dukkah and Caesar dressing.
