Chargrilled Vegetable Mini Burgers

Ingredients

10g Mini burger buns or sliders

100g Tallegio cheese

30g Olive oil

2 Garlic cloves - minced

150g Eggplant

200g Courgette

200g Red onion

200g Kumara

Sea salt & milled black pepper

10 tsp Prep Kitchen Sweet Tomato & Smoked Chipotle Relish

60g Base Prep Kitchen Aioli

30g Rocket

25g Micro greens

Instructions

  1. In a large bowl add minced garlic, olive oil and seasoning to use for the vegetables.
  2. Cut the vegetables into 1/2cm rings and roughly the same diameter as the burger buns. Place the vegetables in the seasoned bowl and toss around gently till covered in oil, garlic and seasoning.
  3. In a blender mix the rocket, aioli, lemon juice and seasoning.
  4. Using a griddle pan or chargrill cook the vegetable’s until cooked with lots of colour.
  5. Stack the cooked vegetables up and place a small amount tallegio on top. Place under the salamander or in the oven to melt the cheese over the vegetables.
  6. Toast the sliced buns and then spread rocket Aioli on the bottom slice, then the vegetable stack followed by Prep Kitchen Sweet Tomato & Smoked Chipotle Relish on the top.
