3 springs of mint – leaves removed and then finely chopped or ¼ cup mint – finely chopped
½ cup grated cucumber (juice squeezed out)
½ cup coconut yoghurt
Juice of 1 lime
1-2 cups of roughly chopped fresh coriander
1 red chilli – deseeded and finely sliced
½ small red onion or 1 shallot – finely sliced and rinsed through water to remove the bitterness
1 Tbsp vegetable oil
Pinch of brown sugar
Sea salt
Freshly ground black pepper
4 burger buns
